Liz Moore

Liz Moore is well known across the culinary scene of Ireland. She is a self-taught and well read professional within the food industry and set up the Belle Isle School of Cookery with the Duke of Abercorn in 2003.

Throughout her career Liz has cooked for many well known names but is most privileged to count HRH The Queen, HRH The Duke of Edinburgh and HRH The Prince of Wales as recipients of her culinary delights.

She has worked alongside many chefs but counts her time spent with triple Michelin starred chef Michel Roux Snr. amongst the most notable experiences. “Food, and the whole fine dining experience, just doesn’t get any better than at The Waterside. For those lucky enough to experience it, it is eternally memorable”.

Liz is becoming increasingly well known to the TV audience in Ireland and has recently appeared in the following programmes:-

Coming soon in 2010 "Iron Chef" Channel 4
Great British Menu BBC2
The Fabulous Food Adventure UTV
Laurence and Jackie’s Northern Exposure BBC NI
Lesser Spotted Ulster UTV
The Afternoon Show RTE

In May 2007, Liz represented Northern Ireland when she cooked alongside Noel McMeel, Sean Owens and Nick Price at Restaurant Eve with Chef/patron Cathal Armstrong. The culinary team cooked a modern representation of Irish cuisine for 70 guests, followed by a Canapé Reception in Washington DC, hosted by the then British Ambassador to the United States, Sir David Manning.

Two weeks after returning from Washington (and two weeks before her wedding day), Liz was back in the US capital as part of a team representing Northern Ireland at the high profile Smithsonian Folk Festival.

In May 2008, Liz represented Fermanagh at a Canapé Reception for 150 dignitaries at the start of the USNI Investment Conference at the Ulster Folk and Transport Museum.

Whilst Liz will not be working full time at Taste, her knowledge and experience will be behind many of the mouth watering dishes available on the menu.

Andy Cairns
After meeting Liz, Andy left the Cotswolds in England and moved to Fermanagh in 2005. With family roots already in Northern Ireland, Andy’s paternal Grandparents were from the Mill Row area of Armagh.

Andy and Liz were married in July 2007 at Killeevan, Co Monaghan and are now the very proud parents of their two children Jasper Archie and Philippa Audrey.

Andy has nearly 20 years experience in commercial account management within the FMCG sector, predominantly dealing with the major supermarkets, wholesalers and symbol groups within the UK and Ireland.

Having wanted to set up in business for a number of years, and being passionate about good food and wine, the time seemed right to take the step and create something from scratch.

Along with Liz, Andy spent nearly 2 years formulating a business plan for Taste and searching for the right premises in their chosen town of Enniskillen. Following the birth of their second child Philippa Audrey on 1st November, Taste opened for business on Friday 28th November 2008. Sadly, 3 days later, Andy lost his father unexpectedly following illness in his home town of Darlington in England. Andy is General Manager of the business.

Ryan McMillan

Ryan has been in the kitchen at Taste since February 2009 and was made Head Chef shortly after in May of the same year. Whilst it is his first position in charge of an entire kitchen, Ryan is quickly building a strong reputation for delivering flavorsome, high quality, uncomplicated food. Great food which people just want to eat.

Ryan has been on the culinary circuit in Northern Ireland for over 10 years. He counts time spent with Paul Rankin at his Cayenne and Roscoff restaurants, along with time at the Lough Erne Golf Resort working under Noel McMeel as his biggest learning grounds.

Ryan eats and sleeps food and when he’s not in the kitchen cooking food he can probably be found in a quiet bar enjoying a pint of Guiness and talking about food!
An avid reader of cookery books, Ryan gets lots of inspiration from many of the world’s leading Chef’s but says that his ultimate food hero has to be Marco Pierre White.
